Hi there! I’m glad you’re here – because that means you have an interest in eating well, so I already know we’ll be friends.
I have been cooking my entire adult life. I entered a professional kitchen just after my 15th birthday, and have never looked back. (I’ve been told I was a nice quiet boy before I went to work in the kitchen, but that’s a story for another day.)
I have worked in Colorado, California and Hawaii, but wherever I traveled I made it my goal to learn as much as I could about each area and its food. I believe that you can learn a lot about people and reach an understanding through food. I also think life is too short to not experience new things whenever you can, and too long to eat the same thing day in and day out.
I have lived in the Grand Junction area for 14 years. For the first three years my wife and I owned a restaurant, Grits, where we served only Colorado-grown wines and used local produce whenever possible. It’s trendy now to take a local approach to food, but I always believed doing so resulted in a better product on the table.
Since selling the restaurant, I have taught Culinary Arts at Mesa State College. My students not only keep me busy but also interested in food with a fresh perspective – and they get me out in the community working with the food-service outlets that hire them.
During the time I’ve lived in Grand Junction, the food scene has progressed and matured. The Grand Valley is filled with foodies, from the guy who obsesses over making cheesecake, to the winemaker who opened a tasting room in Fruita featuring wine from all across Colorado, to organic peach farmers in Palisade.
